There are fewer and fewer places where woodland and farmland still coexist. Even fewer places that have been in the same family for 160 years.
This past year at an old family farm in Western New York we worked to clear brush from maple trees, and set up tubing and taps. Throughout the winter we worked with snow shoes and toboggans in waist deep snow to reach the trees. By cooperating with several other small farmers to tap, collect and evaporate sap we made pure maple syrup...a tradition in this country since first discovered by Native Americans.
